FROM MY KITCHEN

SWEET POTATO POUND CAKE / BREAD

1 cup butter
2 and 1/2 cups mashed cooked potatoes
3 cups flour - all purpose
2 tsp. baking powder
1/2 tsp. nutmeg
1 tsp. vanilla flavoring
2 cups sugar
4 large eggs
1/4 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/2 cup chopped pecans

Cream butter and sugar until smooth.  Add cooked sweet potatoes and beat until light and fluffy.  Add one egg at a time.  Combine the dry ingredients listed above and add to the creamed mixture slowly.
Add the vanilla and then stir in the pecans.

Bake in a tube pan / bundt cake pan at 350 for 1 hour and 15 mins.

Or.... use 3 loaf pans. 

I prefer to use the loaf pans and use the loaves as gifts.
Serve as sweet potato bread.  Yummy!!!
