FROM MY KITCHEN

This one is for Mrs. Owens - Happy Birthday!

Broccoli & Cheese Soup

Saute one medium yellow onion - chopped in 4 TBSP of butter until soft
Boil & drain - 2 boxes of chopped broccoli (or one large bag)
Add the onions to the cooked broccoli.
Add 3 cans of (Campbell's) Cream of Chicken soup
(*save the points from the labels on the soup cans & send to school)
Add one large can of (Pet) evaporated milk.
1 pound of Velveeta cheese cut into cubes
Stir constantly over medium heat.
Add whole milk until it is the consistency you like.

I like to top mine with a little shredded mozzarella cheese & oyster crackers when serving.
