FROM MY KITCHEN - CHOCOLATE GRAVY (and biscuits)

When my dad was growing up, my grandmother, Granny Roe,  made chocolate gravy & biscuits every Christmas Day for breakfast.  It was a very special treat, and it has continued to be a tradition in my home.  Please understand, we enjoy this specialty more often than just Christmas Day, but my children and my dad always know this will be served on that special day.

Many of you may know that I'm at the hospital right now with my dad.  While working on a barn, he fell through the roof and landed on a concrete floor.  He was unconscious for a while.  When he came to, he couldn't walk.  He pulled himself through the barn with his arms, across the gravel, to his truck.  He used the steps on his truck to pull himself up where he could open the door to retrieve his phone.  He called 911 and then waited in 100 degree weather for help to arrive.  He was airlifted to the hospital on Thursday.  He has a concussion and a fractured skull.  They have found no other broken bones.  He is having trouble with his hip.  At this time, he still cannot sit upright.  We know what a miracle it is that he is still here with us.  I want to thank the school community for all of their kind words & special thoughts while we've been here in the hospital.  They've given us no indication as to when he will be released.  He still has a lot of healing to do.

I hope you and your family enjoy "Chocolate Gravy & Biscuits" as much as we do.

In a medium saucepan, melt 1/2 to 1 stick of butter.

In a bowl, combine:
3 TBSP all purpose flour (heaping)
3 TBSP unsweetened cocoa powder (heaping)
2 cups sugar
1/2 cup milk
Mix the ingredients above to make sure there are no lumps.  You may add a little more milk if it is needed to get a smooth mixture.

Pour this into the saucepan, over the melted butter.  Add about 3  to 4 cups of milk slowly.
Stir constantly over medium /high heat until it begins to boil and thicken.  Remove from heat and serve over buttermilk biscuits (or your favorite kind).

You may add more cocoa for a richer chocolate taste.
You may add more or less flour - depending on if you like it thick or thin
You may add more or less milk also.
