Cinnamon Rolls: (never use a metal pan, metal bowl, or metal spoon)
In a pan, scald 2 cups whole milk (heat until it is about to boil - then remove from heat).
Add 1/2 cup vegetable oil and 1 cup sugar to hot milk. Stir until the sugar is dissolved.
Move to the side and allow to cool until luke warm (about 30 mins.) Pour milk mixture into a plastic container.
When milk mixture is luke warm, add 1 package of rapid rise yeast. Let sit one minute. Stir with a bamboo or plastic spoon. Add 4 cups of all purpose flour. Stir until mixed well.
Cover and let rise one hour.
Add 1/2 cup flour, 1/2 tsp. baking powder, 1/2 tsp. baking soda. and 1/2 tsp. salt. Stir this into the dough that has been rising. Do not over stir.
Cover. You have 2 options - put in fridge til morning and then finish (I have never tried this one.)
or let rise. I usually heat my oven for about 5 minutes and then turn it off. I place the covered container in the slightly warm oven and leave for about 3 or 4 hours.
If dough starts to rise out of the bowl, punch it down and cover again.
Ready to move to next phase:
Put wax paper down on table or large working area. Sprinkle with flour. Take 1/2 of the dough out of the bowl. I use my hands and mash down and out to form a rectangle on top of the floured surface. Melt one stick of butter. Pour melted butter on top of dough. Use just enough to make sure it is covered well. Sprinkle cinnamon on top of melted butter - about 5 tablespoons (more or less - depending on how much you like cinnamon). Sprinkle sugar on top - about 3/4 - 1 cup.
Roll the dough carefully. I start on the long side of the rectangle and roll toward the other side. You may have to carefully lift the dough (as you roll) to keep the butter, cinnamon, and sugar from running off the dough.
Place parchment paper on a baking pan or in a cake pan. Use a knife and cut the rolled dough into sections (about 1and 1/2 inches long). Place the cut sections - standing up so you can see the swirled dough on the parchment paper.
Repeat with the other 1/2 dough.
Top with melted butter to make sure each section is damp. Place back into a slight warm oven and allow to rise again for about 30 minutes.
Cook at 400 degrees for 15 - 25 minutes - until done. Do not overcook, but make sure center is done.
Icing:
1/2 bag powdered sugar, 1 tsp. vanilla flavoring, 1/4 cup milk, 1 tbsp. melted butter, (optional: 1 tbsp. brewed coffee). Pour over the warm cinnamon rolls just after removing them from the oven. I usually make extra icing. * I have never added the coffee.

Fall Festival - Great Fun
The Annual Fall Festival was a huge success! Thank you parents, teachers, volunteers, and students. A great time was had by all. The rain did not stop our fun. A special thanks to Mr. Gross for allowing us to use the MAC building for the games. Mr. Greer, Mr. Thomas, Mr. Clarence, Mrs. Wells, Mrs. Barnes, Mrs. Pridgen, and several students helped with the clean-up process. I do believe that it looked better when we finished than it did when we started!!! Way to go!

FROM MY KITCHEN
BASIC PIE FILLING
"Old Fashioned Banana Pudding" - pie filling
"Chocolate Pie" - pie filling
"Coconut Pie" - pie filling
1/2 cup flour - all purpose
1 and 1/2 cups sugar
4 eggs separated (I usually use 5)
2 cups milk (I use 1 large can PET evaporated milk and then add whole milk to make 2 cups)
1 tsp vanilla flavoring
1 TBSP butter or margarine
Mix flour and sugar in a microwavable glass bowl.
Stir in one cup of milk.
Separate the eggs.
Add one egg yolk at a time, beating thoroughly.
Add the other cup of milk.
Stir well.
Heat in the microwave for 4 to 5 minutes.
Remove from the microwave and stir well with whisk.
Cook an additional 4 minutes or so - until the mixture is thick.
Do not overcook.
Total cooking time with a high wattage microwave is usually 8 to 9 minutes.
Add margarine and vanilla after the filling reaches desired thickness.
Whisk until smooth.
Place in a cooked deep dish pie shell.
Variations:
Coconut Pie - add 1 to 2 cups of Angel Flake coconut.
Use the egg whites and sugar to make meringue. Sprinkle coconut on top
of meringue and cook meringue.
Chocolate Pie - During the first step - add 5 TBSP unsweetened cocoa to the flour and sugar. Stir well to make sure there are no cocoa lumps. Use the egg whites to make meringue.
Banana Pudding - Fold bananas into the cooked pudding. Line the pan with vanilla wafers or fold into the pudding. Use the egg whites to make a meringue to put on top of the "old fashioned" banana pudding.

He shared information with students about he became a children's book author. He discussed where he finds subjects for his books, what it is like to work with an illustrator, and he encouraged the students to write their own books.

FIRST GRADE FIELD TRIP - OCT. 11
The first grade students will be visiting PaPa Simpson's Farm in Arcadia, Louisiana on Thursday, October 11th.
The buses will leave at 7:45 a.m. and return at the end of the school day.
The first grade teachers look forward to their annual pumpkin patch trip all year. I think the teachers are more excited about this trip than the students!!!

Homecoming is October 12th. Our theme this year
is "Game On !!" The P.C. High School Student Council is selling t-shirts.
There are two choices for the T-shirt color: charcoal heather grey or fluorescent pink. The youth pink shirts
will be a darker pink than the adults.
The t-shirts will have the design on the
back and a pocket design on the front.
Order forms must be returned by Wednesday morning!!! Forms can be turned in at the Elementary, Middle School, or High School Office. Payment is due with each order. The price is $13 for
sizes S-XL. Add $1 for any size after XL. Make checks payable to P.C. Activity
Fund.

FALL FESTIVAL - PARENT VOLUNTEERS
Parents - Please contact your child's teacher if you will be able to volunteer as a worker for the Fall Festival. The festival is a day full of fun activities. The only way this day can be a success is with your help. If you are unable to work in the booth, please ask a grandparent, aunt, uncle, or friend to help. Thank you so much!!!
