FROM MY KITCHEN

BASIC PIE FILLING

"Old Fashioned Banana Pudding" - pie filling
"Chocolate Pie" - pie filling
"Coconut Pie" - pie filling

1/2 cup flour - all purpose
1 and 1/2 cups sugar
4 eggs separated (I usually use 5)
2 cups milk (I use 1 large can PET evaporated milk and then add whole milk to make 2 cups)
1 tsp vanilla flavoring
1 TBSP butter or margarine

Mix flour and sugar in a microwavable glass bowl. 
Stir in one cup of milk.
Separate the eggs.
Add one egg yolk at a time, beating thoroughly.
Add the other cup of milk. 
Stir well.
Heat in the microwave for 4 to 5 minutes.
Remove from the microwave and stir well with whisk.
Cook an additional 4 minutes or so - until the mixture is thick.
Do not overcook.
Total cooking time with a high wattage microwave is usually 8 to 9 minutes.
Add margarine and vanilla after the filling reaches desired thickness.
Whisk until smooth.
Place in a cooked deep dish pie shell.

Variations: 
Coconut Pie - add 1 to 2 cups of Angel Flake coconut. 
Use the egg whites and sugar to make meringue.  Sprinkle coconut on top
of meringue and cook meringue.

Chocolate Pie - During the first step - add 5 TBSP unsweetened cocoa to the flour and sugar.  Stir well to make sure there are no cocoa lumps.  Use the egg whites to make meringue.

Banana Pudding - Fold bananas into the cooked pudding.  Line the pan with vanilla wafers or fold into the pudding. Use the egg whites to make a meringue to put on top of the "old fashioned" banana pudding.
