APPLE DUMPLINGS
Granny Smith Green Apples
Mt. Dew (1 can)
1 1/2 cups sugar
2 sticks butter
1 can Pillsbury "Big & Buttery" Crescent Rolls
Cinnamon (you decide how much you like)
* I use about 2 tsp.
2 TBSP White Karo Syrup
9X13 cake pan (*spray with Pam)
Preheat over to 350.
Peel apples.
Use a slicer and cut apples into equally sized slices.
In a saucepan - melt butter
add sugar, cinnamon, and syrup
Heat until all ingredients are well blended.
Do not boil.
Open crescent rolls.
Begin at the small end.
Roll 2 slices of apple with the crescent rolls.
Fold the ends around the apple slices.
You will have made a round ball of dough around the 2 slices.
Place the dough with the sealed side down in the cake pan.
No more than 6 or 8 in a 9X13 cake pan.
(I usually use an 11X13 pan and do 8.)
Pour the buttery mixture over the dumplings. Use all of it.
Open a can of Mt. Dew and pour into the cake pan -
down the middle and around the edges.
Sprinkle more cinnamon on top of the dough (if you like cinnamon).
Bake at 350 for 35 - 45 minutes. Make sure the tops are beginning to brown.

Shoeboxes are Needed!!!!
Operation Christmas Child is just around the corner. Each year we love filling those green & red boxes. Did you know a local church provides those boxes for our students? This year we'd like to help out with the boxes needed locally.
We will still be using the green & red boxes, but we are going to donate boxes to the church & community to be filled by others.
PLEASE send any shoeboxes (with lids) you have at home to the school. You can also pick up plastic shoeboxes (with lids) at local stores to donate.
The last day to donate boxes will be Wednesday, October 3rd.
The class that donates the most boxes will win a special prize!!!

HEARING & VISION TESTING
Nurse Dianna will begin testing our students this week. Please make sure your child wears his / her glasses each day (if prescribed) so that the testing will be accurate. If Nurse Dianna discovers there is a problem, she will schedule a retest. When retested, if a problem is still noted, you will be notified that there is a suspected problem, and you will need to contact a doctor for a formal screening and checkup.

FROM MY KITCHEN
KRAUT SALAD
1 can Kraut drain & chopped
1 medium green bell pepper chopped
1 medium purple onion chopped
1 small jar pimentos
1/4 to 1/2 cup chopped celery
Mix together.
Dressing:
1/2 cup vegetable oil
1/2 cup white vinegar
1/2 to 3/4 cup sugar
Mix together and pour over the kraut mixture. Allow to marinate for 24 hours for best results.
Keep in the refrigerator.

SWEET POTATO POUND CAKE / BREAD
1 cup butter
2 and 1/2 cups mashed cooked potatoes
3 cups flour - all purpose
2 tsp. baking powder
1/2 tsp. nutmeg
1 tsp. vanilla flavoring
2 cups sugar
4 large eggs
1/4 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/2 cup chopped pecans
Cream butter and sugar until smooth. Add cooked sweet potatoes and beat until light and fluffy. Add one egg at a time. Combine the dry ingredients listed above and add to the creamed mixture slowly.
Add the vanilla and then stir in the pecans.
Bake in a tube pan / bundt cake pan at 350 for 1 hour and 15 mins.
Or.... use 3 loaf pans.
I prefer to use the loaf pans and use the loaves as gifts.
Serve as sweet potato bread. Yummy!!!

Combine 1/2 cup soy sauce and 1 tsp. garlic salt or garlic powder. Cut 4 boneless / skinless chicken breasts into cubes or strips. Soak in the soy sauce mixture for at least one hour.
Drain when you are ready to cook.
Brown 1/2 cup slivered almonds and 1/4 cup sesame seeds in 2 TBSP butter. Do not burn. Set to the side and use later.
Use nonstick spray and cook the chicken pieces.
In a large bowl combine:
1 package of coleslaw mix
6 to 8 chopped green onions
1 can drained bean sprouts
2 packages of Oriental Flavored Ramen Noodles crumbled - NOT COOKED
(SAVE THE SEASONING PACKET TO USE LATER IN RECIPE)
2 cans of water chestnuts
Chop the cooled chicken and add to the slaw mix.

LISTENING - HELPS COMPREHENSION
Over the years I have fought the AR battle with my children at times.
Don't get me wrong... I will forever sing the praises of AR. It is the one program I have seen over my 21 years in education that WORKS - WORKS - WORKS !!! The problem I have found ... is ... time management! AND ... that is totally my fault. I want my children involved in the many activities they love - ball, hunting, more ball, more hunting, four - wheeler riding, more ball and more hunting ... you know - the list goes on. I'm sure you just caught a glimpse of your life through my description. Well, I want to share something I have found that works wonderfully for my children.
The answer for my family has been "Audible" , also known as audible.com.
If you have a home computer, a smart phone, an MP3 player, iPod, iPad, etc. this might work for you. I became a member a couple of years ago. I pay a monthly membership and this entitles me to one free download each month. After that, I can download other books at a reduced price. My children listen to these books using their personal device. I require them to have their book in hand and to follow along. I am not a fan of them just listening. I think they need to read and listen at the same time.
I have found that my children at times have wandering eyes and lose their focus very easily. If they are reading and listening at the same time, they usually finish much larger. more advanced books, in much less time. Then they feel a sense of accomplishment as well.
If you are having trouble getting your children motivated to read you might want to give this a try. If you have any questions about how this works, stop by the office and I'll be happy to talk to you about its benefits.

MUSIC FOR KINDERGARTEN
Mrs. Barbie Webb Brodnax has volunteered to work with the kindergarten students this year. She is currently working on a music teaching degree at Southern Arkansas University. She is a very talented lady and we are very honored that she is sharing her love of music with our little ones.

I want to thank each and every parent and teacher that participated in the Fall 2012 Parent / Teacher Conferences. We had a great turnout. I will be posting our attendance percentages as soon as I return from my meeting.

FALL FESTIVAL
The Parkers Chapel Fall Festival has been scheduled for October 26th.
Parents, Grandparents, Aunts, Uncles, & Friends... we need your help & support to make this a day to remember. There will be games, prizes, food, and fun. SHRIMP CHOWDER
Saute' a small yellow onion (finely chopped) in 3 Tbsp. butter.
In a large pot, combine:
4 cans Campbell's (send your labels to school) Cream of Potato soup
3 cans (drained) whole kernel corn
8 oz. cream cheese
4 cups milk (I usually use 2 cups pet milk & 2 cups 2% milk) & (you can use more milk if you like)
salt, pepper, red pepper to taste (I add a lot of red pepper.)
cooked onion
I use 1 teaspoon red pepper, sometimes more!
Add cooked shrimp - whatever size you like. Heat thoroughly.
*Original recipe calls for "salad shrimp". I prefer the larger cooked /deveined shrimp.
*Sometimes I use both - salad shrimp & larger shrimp.
I usually double the recipe and prepare in large crockpot.

Reid is the nine year old son of Alan and Karrie Cates. He has lived in Parkers Chapel all of his life, but this is his first year to attend our school. He was nominated for this award by his teachers, Mrs. Vicki Pepper and Mrs. Rachel Hardy. They felt Reid was deserving of this honor for many reasons. Reid is an excellent student. He makes above average grades. He is polite and considerate at all times. He is a great role model for other students. He has made a very smooth transition into our Parkers Chapel family, and we are thrilled that he is here.
Reid likes to play baseball. He plays for two teams; one local and one traveling tournament team. His positions include pitcher, short-stop, and third baseman. He also likes to hunt - everything. His greatest hunting moment is when he killed a nine point buck.

FROM MY KITCHEN - CHOCOLATE GRAVY (and biscuits)
When my dad was growing up, my grandmother, Granny Roe, made chocolate gravy & biscuits every Christmas Day for breakfast. It was a very special treat, and it has continued to be a tradition in my home. Please understand, we enjoy this specialty more often than just Christmas Day, but my children and my dad always know this will be served on that special day.
Many of you may know that I'm at the hospital right now with my dad. While working on a barn, he fell through the roof and landed on a concrete floor. He was unconscious for a while. When he came to, he couldn't walk. He pulled himself through the barn with his arms, across the gravel, to his truck. He used the steps on his truck to pull himself up where he could open the door to retrieve his phone. He called 911 and then waited in 100 degree weather for help to arrive. He was airlifted to the hospital on Thursday. He has a concussion and a fractured skull. They have found no other broken bones. He is having trouble with his hip. At this time, he still cannot sit upright. We know what a miracle it is that he is still here with us. I want to thank the school community for all of their kind words & special thoughts while we've been here in the hospital. They've given us no indication as to when he will be released. He still has a lot of healing to do.
I hope you and your family enjoy "Chocolate Gravy & Biscuits" as much as we do.
In a medium saucepan, melt 1/2 to 1 stick of butter.
In a bowl, combine:
3 TBSP all purpose flour (heaping)
3 TBSP unsweetened cocoa powder (heaping)
2 cups sugar
1/2 cup milk
Mix the ingredients above to make sure there are no lumps. You may add a little more milk if it is needed to get a smooth mixture.
Pour this into the saucepan, over the melted butter. Add about 3 to 4 cups of milk slowly.
Stir constantly over medium /high heat until it begins to boil and thicken. Remove from heat and serve over buttermilk biscuits (or your favorite kind).
You may add more cocoa for a richer chocolate taste.
You may add more or less flour - depending on if you like it thick or thin
